3 PHASE EATING PLAN:
1. ELIMINATION - Identify what foods are holding you back (grains, sugars, dairy, nuts, legumes). Detox for 14 days.
2. DISCOVERY - Reintroduce each eliminated food - one at a time to determine which foods are troublesome for you.

GRAIN FREE SNICKERDOODLE CAKE
Ingredients:
6 Eggs, lightly beaten
1/4 Cup Raw Honey or Pure Maple Syrup
1⁄2 Cup Melted Extra Virgin Coconut Oil
3/4 Cup Coconut or Almond Milk (unsweetened)
1 Tablespoon Apple Cider Vinegar
1 Teaspoon vanilla
3/4 Cup Coconut Flour
1⁄2 Teaspoon Salt
1⁄2 Teaspoon Baking Soda
1 Teaspoon Cinnamon ( plus extra to sprinkle)
1/8 Teaspoon Monk Sugar Extract* or your sweetener of choice to bump up sweetness if desired.
*We LOVE the Monk Sugar Extract noted above and use it for all our sweet recipes. It is so concentrated, it will last 12-24 months.
Preheat oven to 375 ̊F
In a medium size bowl, mix eggs with a whisk. Add raw honey or maple syrup, melted coconut oil, coconut/almond milk, apple cider vinegar & vanilla to egg mixture and whisk until combined. Combine coconut flour with salt, baking soda and cinnamon and added sweetener of choice in a large bowl. Add wet ingredients to dry and mix until combined into a batter. Batter will thicken gradually as liquid ingredients get absorbed.
CAKE OPTION: Spoon batter into un-greased 8X8 baking dish until 1/2 full. Sprinkle with cinnamon and then pour out remaining batter and sprinkle again.
Bake for 26-32 minutes or until cooked through middle and starting to turn golden on the edges and top.
MUFFIN OPTION: Spoon batter into un-greased muffin pan 1/2 full. Sprinkle with cinnamon and monk sugar, then pour out remaining batter and sprinkle again.
Bake for 18-24 minutes or until cooked through middle and starting to turn golden on the edges and top.
Serves: 12 – Approx. 160 Calories, 9g Carb, 3.5g Protein, 12g fat
